Brasato is a type of grilled meat where meat (rarely fish) but
Malaysians like fish. It is simmered slowly over medium heat in a small amount
of boiling liquid, usually wine, beer or stock, and spices. This dish is
usually a favorite of Indians. While the brasato is cooked in alcohol, the meat
is pre-soaked in the liquid along with the soffitto base (onions, carrots, and
celery) for a few hours. When the meat is ready, the liquid is strained or
