Parmigiana or parmigiana di melanzane is an oven-baked dish made of fried eggplant slices topped with tomato sauce, basil, garlic and one or more pecorino, mozzarella, or caciocavallo cheeses. The origin of this dish is still debated, but the most likely hypothesis is that it originated in Southern Italy, both Campania and Sicily.
